Chicken is one of the easiest ways to put a satisfying meal on the table. These four ideas use everyday ingredients and suit busy weeknights as well as weekend family dinners.
1. Lemon and herb roasted chicken thighs
Toss boneless chicken thighs with olive oil, lemon juice, garlic, oregano, salt and pepper. Roast at 200°C (400°F) until golden and cooked through. Serve with rice and a green salad.
2. Saffron chicken with rice
Brown chicken pieces with sliced onion and turmeric, add water and a little bloomed saffron, and simmer until tender. Serve over fluffy rice for a comforting family meal.
3. Crispy baked chicken wings
Pat wings dry, season with paprika, garlic powder and salt, and bake on a rack until crisp. Serve with a yogurt and herb dip.
4. Quick chicken wraps
Slice chicken breast, cook it with cumin, paprika and a squeeze of lemon, then wrap it in warm flatbread with lettuce, tomato and garlic sauce.
Cook chicken safely
- Never rinse raw chicken, and use a separate cutting board (Health Canada, poultry safety).
- Cook chicken pieces to 74°C (165°F) and a whole chicken to 82°C (180°F), checked with a digital food thermometer (Health Canada, cooking temperatures).
- Refrigerate leftovers within 2 hours.
